Sausage or
Pepperoni Bread
Ingredients:
Pizza dough or Italian bread dough
(you can make your own from a favorite recipe or buy pizza dough from your
local supermarket)
1 lb. of sweet or hot Italian sausage
or 1 stick of pepperoni
Parmesan cheese
Fresh mozzarella cheese, sliced thin.
2 eggs lightly beaten.
Directions:
For sausage bread: remove outer
casing from sausage and crumble meat. Cook over medium heat in
skillet until lightly browned. Drain all the fat from pan and place
meat on paper towel lined dish to absorb any remaining fat. Cool.
For pepperoni bread: Slice
pepperoni paper thin at an angle. Arrange slices on a paper towel
lined dish and cover with a second piece of paper towl to absorb the extra
oil from meat. Put aside.
Roll out dough on flour dusted board
into a rectangular shape approximately 12" lengthwise by 8"
wide. The dough should be rolled so it is only about 1/2"
thick. Additional dough can be used for second loaf.
Brush beaten egg onto dough, be sure
to cover dough completely with egg wash. Arrange dough so that the long
part of the rectangle is facing you. Start making a line of meat
about two inches in from edge of dough closest to you. Sprinkle with
parmesan cheese and top with slices of mozzarella. Cover the mixture
with the dough and brush with egg wash. Lay another row of meat,
parmesan and cheese slices down and roll dough over new line of meat,
brushing with egg wash. Continue arranging meat and cheese and
brushing with egg until loaf is rolled completely. Brush top and
sides of rolled loaf with egg wash. Using a serrated knife make
three cuts in top of loaf to allow steam to escape while baking.
Place loaves on greased baking sheet
and bake in 350 degree oven until brown. Test for doneness by
turning loaf over and gently tapping on bottom of loaf. If the loaf
sounds hollow, it is fully baked, approximately 30 to 40
minutes. Allow loaves to rest at least 15 minutes before
slicing.
