Brie with Fruit
and Almonds
Ingredients:
1 large round of Brie or you can use
baby brie if making individual appetizer plates
dried apricots, cranberries, figs, or
any other dried fruit - diced finely
4
tbsp butter + 2 tbsp of butter for toasting almonds
1/4 cup sliced almonds
Directions:
Melt 2 tbsp of butter in a skillet
over medium heat. Add sliced almonds and spread out so that they are
in a single layer on the bottom of the pan. Stirring frequently,
heat almonds until they begin to turn brown on the edges. Remove
from pan and cool.
Remove top
skin from Brie and top with 4 tbsp of butter cut into slices. Top
with fruit and toasted almonds. Place Brie in an oven proof dish about 2
inches deep and cover with foil.
Bake
in a 350 degree oven, covered until cheese starts to melt and
bubble. Remove foil and bake an additional few minutes until top of
cheese becomes slightly tinged golden.
Serve
immediately with sliced apples and plain crackers.
