Cauliflower Latkes

Ingredients:

2 cups cauliflower, cooked
2 tablespoons matzo meal
2 eggs
Salt and pepper

 

Directions:

Chop cauliflower and combine with rest of ingredients. Form into latkes, and fry. Heat vegetable oil in a skillet over medium flame. Scoop out a tablespoon of the mixture and drop into the oil. Flatten the patty in the pan. Cook until golden and flip to the other side. Continue cooking until both sides are brown, approximately 12 minutes. Drain on paper towels.
